Of Oklahoman origin, Kelsey is a registered dietitian licensed in the State of New Mexico who is loving her first year with Holy Cross. Before coming to Taos she completed her dietetic internship in 2016 wherein she accumulated 1200 supervised practice hours at such sites as the Facebook campus and San Quentin Prison. After her internship she went on to do a two-year stint in a rural Cambodian village as a Community Health Education volunteer for the Peace Corps. She’s a lover of food, cross-cultural connections, language learning and wants you to know that she isn’t the “food police” – all foods can fit!
